State Cheese Output Drops After Two Months of Increases

After seeing two consecutive months of higher production for the first time in 2020, cheese output in Wisconsin fell below year-ago levels again during August. According to the latest dairy product summary from the USDA, the state produced 277.6 million pounds of cheese during the month. That was 1.2 percent less than last year, and a slight 0.4 percent lower than this past July.

Nationally, about 1.09 billion pounds of cheese was produced in the United States in August. That was a 2.1 percent decrease from 2019 and 1.6 percent lower than the previous month.

Wisconsin's production of American cheese increased as the state produced 84.8 million pounds, about 7.2 percent more than last year, but unchanged from last month's production. Cheddar output also rose 6.3 percent compared to 2019 to total 58.9 million pounds, and went up 0.5 percent from the month earlier. Italian cheese production was at 132.4 million pounds, about 6.6 percent below last year, and 1.9 percent lower for the month. And Mozzarella produced in Wisconsin totaled 86.5 million pounds--7.2 percent below August 2019 and 4.1 percent less than July 2020.

Dry Whey output in Wisconsin was recorded at 24.1 million pounds, which was down 1.3 percent from last year, but 4.5 percent higher compared to last month.
