State Cheese Production Rises for 12 Consecutive Months

The USDA reports that Wisconsin's dairy plants have made history by producing more cheese products each month than the same period a year prior for 12 straight months. The latest dairy product summary by USDA notes that Wisconsin produced 251.5 million pounds of cheese in August--which was up 5.3 percent from August 2014, but 3.8 percent less than this past July.

Nationally, 974 million pounds of cheese was produced in the United States. That was 3.5 percent more than the same month last year, but 1.7 percent below the previous month's production totals.

Wisconsin's production of American cheese increased as the state produced 74.5 million pounds, about 7.7 percent more than last year, but 4.9 percent lower than last month's production. Cheddar output rose by 7.8 percent compared to 2014 to total 49.3 million pounds, but was down 6.4 percent from the month earlier. Italian cheese was at 127.1 million pounds, about 6.1 percent above last year, but 2.7 percent less for the month. And Mozzarella produced in Wisconsin totaled 88 million pounds--about 6.8 percent more than August 2014, but down 2.8 percent compared to July 2015.

Dry Whey output in Wisconsin was recorded at 25.8 million pounds, which was up 14.7 percent from last year, but 6.8 percent lower from last month.
