State Cheese Output Drops for Third Straight Month

Wisconsin cheese production fell for the third consecutive month during October. According to the USDA's latest dairy product summary, the state churned out 285.9 million pounds of cheese during the month. That was 0.9 percent less than last year, but 2.8
percent more than this past September (which had less days on the calendar).
Nationally, about 1.13 billion pounds of cheese was produced in the United States in October. That was a slight 0.6 percent decrease from 2019, but 1.3 percent more than the previous month.
Wisconsin's production of American cheese increased as the state produced 90.3 million pounds, about 5.3 percent more than last year, but down 6.1 percent from last month's production. Cheddar output also rose 8.0 percent compared to 2019 to total 63.2
million pounds, and went up 7.5 percent from the month earlier. Italian cheese production was at 137 million pounds, about 3.4 percent below last year, but 2.9 percent higher for the month. And Mozzarella produced in Wisconsin totaled 86.2 million
pounds--5.2 percent below October 2019, and 0.4 percent less than September 2020.
Dry Whey output in Wisconsin was recorded at 24.6 million pounds, which was up 3.6 percent from last year, and 18.2 percent higher compared to last month.
