State, National Cheese Production Increased During November

Wisconsin's total cheese production for November was higher compared to year-ago levels. The USDA reports that the state's dairy plants produced 235.5 million pounds of cheese during the month--which was up 4.7 percent from this time last year, and 0.2 percent more compared to October 2012.

Nationally, 912 million pounds of cheese was produced--up 1.8 percent from November 2011, but 1.8 percent below the previous month's production totals (mainly because November has less days on the calendar).

Wisconsin's production of American cheese increased as the state produced 68.7 million pounds, about 4.6 percent more than last year, and 0.1 percent above last month's production. Cheddar output fell by a slight 0.7 percent compared to 2011 to total 45.5 million pounds, and was 1.7 percent lower than the month earlier. Italian production was at 117.2 million pounds, up two percent above last year, but 0.7 percent lower for the month. And Mozzarella cheese in Wisconsin totaled 78.9 million pounds--about 3.6 percent more than November 2011, and 0.5 percent above October 2012.

Dry Whey output in Wisconsin was recorded at 21.3 million pounds, which was down 10.7 percent from last year, and 4.7 percent less than last month.
