Wisconsin Cheese Production Fell in November

Wisconsin cheese production fell for the fourth consecutive month during November. According to the USDA's latest dairy product summary, the state churned out 275.5 million pounds of cheese during the month. That was 1.4 percent less than last year, and 5.1 percent lower than this past October (which had more days on the calendar).

Nationally, about 1.10 billion pounds of cheese was produced in the United States in November. That was a slight 0.6 percent increase from 2019, but 2.7 percent less than the previous month.

Wisconsin's production of American cheese increased as the state produced 87.3 million pounds, about 4.5 percent more than last year, but down 3.5 percent from last month's production. Cheddar output also rose 5.2 percent compared to 2019 to total 62.2 million pounds, but went down 1.3 percent from the month earlier. Italian cheese production was at 131.1 million pounds, about 4.3 percent below last year, and 4.0 percent lower for the month. And Mozzarella produced in Wisconsin totaled 86 million pounds--3.2 percent below November 2019, and 0.1 percent less than October 2020.

Dry Whey output in Wisconsin was recorded at 22.8 million pounds, which was up 1.7 percent from last year, and 5.5 percent higher compared to last month.
