International Meat Product Competition Coming to UW-Madison

For only the second time ever, the International IFFA Meat Quality Competition will be held on American soil and the University of Wisconsin-Madison has been chosen to play host again this year. The American Association of Meat Processors, in partnership with the German Butchers' Association, and the UW Meat Science Extension is holding the contest on January 21-25.

The event will be held at the campus' Institute for Discovery building. This competition is held in conjunction with the 2019 IFFA Show, the leading international trade fair for processing, packaging, and sales in the meat industry occurring every three years, in Frankfurt, Germany.

"It's a great chance for people to learn how an international meat product judging competition works and learn about the quality meat products made across this country, especially here in Wisconsin," says Jeff Sindelar, a UW-Madison associate professor and extension meat specialist in the Department of Animal Sciences.

During the IFFA, over 2,500 different products submitted by butchers and meat processors from all over the world are evaluated by GBA judges for a variety of quality attributes.

The judging will be done by the same German judges as those used for the competition taking place at the IFFA show in Frankfurt in May.

Organizers say the partnership was formed due to the increased issues non-European Union butchers have had with submitting their products into the German show.
