Even with Leap Day, WI Cheese Production Was up in February

Wisconsin dairy plants made more cheese in February than they did the same month a year earlier, even though there was one extra day on the calendar in 2016. The USDA reports that the state churned out 252 million pounds of cheese in February. That was up 1.8 percent from the same period last year, but 8.7 percent less than this past January (which had 31 days of total production).

Nationally, about 942 million pounds of cheese was produced in the United States. That's four percent less than the same month last year, and 9.9 percent below the previous month's production totals. However, when Leap Day was factored in, the nation's processors actually had a more productive daily average for the month this year.

Wisconsin's production of American cheese decreased as the state produced 74.3 million pounds, about 0.4 percent less than last year, and 11 percent below last month's production. Cheddar output rose slightly compared to 2016 to total 51.2 million pounds, but fell 13.9 percent from the month earlier. Italian cheese was at 129.3 million pounds, about 3.5 percent above last year, but 8.2 percent lower for the month. And Mozzarella produced in Wisconsin totaled 84.7 million pounds--about 0.2 percent more than February 2016, but down 7.7 percent compared to January 2017.

Dry Whey output in Wisconsin was recorded at 25.7 million pounds, which was up 7.1 percent from last year, but down by just as much compared to last month.
