Canadian Goat Cheese Maker to Break Ground on Lancaster Project

Ground will be broken today on a goat cheese production facility in Lancaster, which is being constructed by Canada's largest goat cheese producer. Woolwich Dairy says the project will encompass more than five acres in Lancaster's new industrial park. Once completed, it will become the official U.S. headquarters for the company.

According to Chief Executive Officer Tony Dutra, the plant is expected to be about 28,000 square-foot and will employ approximately 30 people.

Woolwich Dairy currently has two production facilities in operation in Ontario and Quebec and is known for its innovative and award winning goat cheese products.

"This new Wisconsin location will provide greater convenience from a logistics standpoint, while providing Woolwich access to cheesemaking professionals." Dutra said. "After all, Wisconsin truly is the heart of the U.S. dairy industry."

Specialty cheese, especially goat cheese, is among the fastest-growing segments of the food industry. Wisconsin produced seven percent more specialty cheese in 2005 than the year before.
