State Cheese Production Up Seventh Straight Month

Total cheese production figures in the Dairy State continues to go up. The USDA reports that Wisconsin's dairy plants produced 255.8 million pounds of cheese during March--which was up 2.5 percent from March 2014, and 13 percent more compared to this past February.

Nationally, 987 million pounds of cheese was produced in the United States. That was 1.8 percent more than the same month last year, and 11.3 percent above the previous month's production totals.

Wisconsin's production of American cheese increased as the state produced 75.1 million pounds, about 6.4 percent more than last year, and 9.5 percent higher than last month's production. Cheddar output rose by 9.5 percent compared to 2014 to total 51.8 million pounds, and was also 9.5 percent more than the month earlier. Italian cheese was at 128 million pounds, about 1.6 percent above last year, and 11.4 percent greater for the month. And Mozzarella produced in Wisconsin totaled 86.9 million pounds--about 3 percent more than March 2014, and up 11.7 percent compared to February 2015.

Dry Whey output in Wisconsin was recorded at 23.1 million pounds, which was down 7.9 percent from last year, but 6.5 percent higher from last month.
