State Cheese Output Rises for 18 Consecutive Months

The USDA reports that Wisconsin's dairy plants continue to make history by producing more cheese products each month than the same period a year prior for 18 straight months. The latest dairy product summary by USDA notes that Wisconsin produced 271.9 million pounds of cheese in March--which was up 4.7 percent from March 2015, and 9.8 percent more than this past February.

Nationally, about 1.03 billion pounds of cheese was produced in the United States. That was 1.8 percent more than the same month last year, and 7.8 percent greater than the previous month's production totals.

Wisconsin's production of American cheese increased as the state produced 80 million pounds, about 4.2 percent more than last year, and 7.2 percent above last month's production. Cheddar output fell by just under one percent compared to 2015 to total 52.9 million pounds, but rose 3.5 percent from the month earlier. Italian cheese was at 137.5 million pounds, about 5.8 percent above last year, and 10.1 percent higher for the month. And Mozzarella produced in Wisconsin totaled 93.8 million pounds--about 6.0 percent more than March 2015, and up 11 percent compared to February 2016.

Dry Whey output in Wisconsin was recorded at 27.5 million pounds, which was up 4.2 percent from last year, and 14.7 percent more than last month.
