State Maple Syrup Output, Yields Rose from 2020

It was another banner year for state maple syrup industry. According to the latest figures from the Wisconsin Ag Statistics Service, maple producers cooked 300,000 gallons of syrup this spring, up 35,000 gallons from 2020.
The number of taps also increased by 70,000 this year to 850,000. Newly released figures show that yield was 0.353 gallons per tap, above the 0.340 gallons per tap a season earlier.
Last year, the average price Wisconsin maple producers received was $29.10 per gallon, down $3.40 from the previous year.
Meanwhile, the most recent Wisconsin maple syrup season began on February 20, which was five days later than in 2020. It ended on March 31--four days sooner than last year's final day.
Wisconsin ranks fourth nationally for maple syrup production, only trailing Vermont, New York and Maine.
