Wisconsin Cheese Production Up During April

Dairy plants throughout Wisconsin continue to produce more cheese than year-ago levels. The USDA reports that the state's dairy plants putout 226.3 million pounds of cheese during the month--which was up 3.9 percent compared to the same month in 2011, but was 4.7 percent less than March 2012 (mainly because there's less days on the calendar during the month of April).

Nationally, 903 million pounds of cheese was produced--up 2.1 percent from April 2011, but 4.7 percent below the previous month's production totals.

Wisconsin's production of American cheese increased as the state produced 72.4 million pounds, about 7.4 percent more than last year, and 0.8 percent above last month's production. Cheddar output rose by 10.7 percent compared to 2011 to total 51.8 million pounds, and was 2.2 percent higher than the month earlier. Italian production was at 113 million pounds, up 1.3 percent above last year, but 7.7 percent lower for the month. And Mozzarella cheese in Wisconsin totaled 76.1 million pounds--3.1 percent more than April 2011, but 8.8 percent below March 2012.

Dry Whey output in Wisconsin was recorded at 25 million pounds, which was up 5.4 percent from last year, but 3.7 percent less than last month.
