Wisconsin Cheese Output Falls Five Consecutive Months

Wisconsin cheese plants made less product during May when compared to the same month a year earlier--making it the fifth straight month of lower output. According to the latest dairy product summary from the USDA, the state produced 280.6 million pounds of cheese in May. That was 1.8 percent less than last year, but 4.9 percent higher than this past April (which had less days on the calendar).

Nationally, about 1.1 billion pounds of cheese was produced in the United States in May. That was a slight 0.7 percent decrease from 2019, but 6.8 percent higher than the amount manufactured during the previous month.

Wisconsin's production of American cheese increased as the state produced 88.4 million pounds, about 3.3 percent more than last year, but 2.5 percent below last month's production. Cheddar output also rose 4.1 percent compared to 2019 to total 62.9 million pounds, but went down 3.9 percent from the month earlier. Italian cheese production was at 142.2 million pounds, about 1.9 percent below last year, but 8.9 percent higher for the month. And Mozzarella produced in Wisconsin totaled 93.1 million pounds--about 1.9 percent less than May 2019, but 14.5 percent above April 2020.

Dry Whey output in Wisconsin was recorded at 26.9 million pounds, which was up 9.0 percent from last year, and 20.6 percent higher compared to last month.
