Wisconsin, U.S. Cheese Production Increased in May

Total cheese production in the Dairy State was up for the ninth consecutive month in May when compared to year-ago levels. The USDA reports that Wisconsin's dairy plants produced 251.6 million pounds of cheese--which was up four percent from May 2014, but 1.1 percent less compared to this past April.

Nationally, 989 million pounds of cheese was produced in the United States. That was 1.8 percent more than the same month last year, and 1.9 percent above the previous month's production totals.

Wisconsin's production of American cheese increased as the state produced 76.6 million pounds, about 5.4 percent more than last year, and 0.4 percent higher than last month's production. Cheddar output rose by 6.6 percent compared to 2014 to total 52.5 million pounds, but was down 0.8 percent from the month earlier. Italian cheese was at 125.5 million pounds, about 3.5 percent above last year, but 1.1 percent less for the month. And Mozzarella produced in Wisconsin totaled 85.9 million pounds--about 4.9 percent more than May 2014, but down 1.6 percent compared to April 2015.

Dry Whey output in Wisconsin was recorded at 26.3 million pounds, which was up 0.2 percent from last year, and 3.7 percent higher from last month.
