State Cheese Production Climbs for Second Straight Month

Wisconsin cheese plants made more product during July when compared to the same month a year earlier--making it only the second time in the past seven months that year-to-year output rose. According to the latest dairy product summary from the USDA, the state produced 280.5 million pounds of cheese in July. That was 1.2 percent more than last year, but down a slight 0.6 percent lower than this past June (despite that month having less days on the calendar).

Nationally, about 1.1 billion pounds of cheese was produced in the United States in June. That was a 1.8 percent increase from 2019, bit a fractional 0.4 percent drop compared to the amount manufactured during the previous month.

Wisconsin's production of American cheese increased as the state produced 84.1 million pounds, about 3.9 percent more than last year, but 0.4 percent below last month's production. Cheddar output also rose 4.4 percent compared to 2019 to total 59.3 million pounds, but went down 1.3 percent from the month earlier. Italian cheese production was at 138.7 million pounds, about 1.6 percent below last year, and 1.8 percent lower for the month. And Mozzarella produced in Wisconsin totaled 93.1 million pounds--unchanged from July 2019 and June 2020.

Dry Whey output in Wisconsin was recorded at 23.1 million pounds, which was down 1.7 percent from last year, and 10.7 percent lower compared to last month.
